I really enjoyed my Spanish course.
Lucy and Simon are wonderful hosts, they have converted their home to a very high standard, comfy beds, excellent shower and stunning views out to the Pyrenees. The food Simon prepared was wonderful- healthy, tasty and locally sourced- a lot of it from his vegetable patch. The Spanish lessons were fun and varied, some in class room and some out in the local villages. We spoke Spanish within the group most of the day - and generally lapsed into English over dinner with a glass of wine in hand! I particularly enjoyed our excursions with Lucy - her knowledge and passion about the local culture and geology was infectious. A particular highlight was a short evening hike to a local village, examining the fossils and geology on route, then chatting in Spanish to local residents who showed us around their homes, church and community hall/school/blacksmiths. A unique experience.
I feel this week has improved my Spanish, and my understanding of the local culture and geology.

What can I say. The whole experience was fantastic. Simon and Lucy make you really welcome in their home. It is not a hotel it is a home.
The food should be served in the smartest of restaurants, exceptional every day.
The farmhouse is beautiful and the accommodation is everything you would want and more. All mod cons in a lovely historic setting.
The wildlife is exceptional and the use of local experts to act as guides is a real bonus. They were all so knowledgeable and enthusiastic you couldn't help be excited.
This holiday is an absolute treat. No one could possibly be disappointed.
Thanks Simon and Lucy for a fantastic experience

An incredible week at Casa Allue. Walking in the Pyrenees, learning about the geology, fauna and wildlife. Meeting local makers of olive oil , cheese , and wines. Seeing some of the most beautiful hilltop villages in the Aragon region. This was the Cooking and Hiking venue. We ate some incredible meals and learned to cook tapas, paella, and several other regional dishes. Lucy and Simon were gracious hosts and the accommodations were spectacular. 5 stars are not enough. Thank you Lucy and Simon .

We had a wonderful week on the Cooking and Walking Holiday! Lucy and Simon are amazing hosts. While their property is in what could best be described as a remote, medieval hamelt, we were never bored. The views are soul feeding, and the food was amazing using simple, fresh ingredients, many of which Simon and Lucy grow on the property. Their desire to infuse sustainability into every aspect of their business is evident. For the first cooking class, Simon taught us the proper to debone a whole chicken to get the most meat off the bone. We then used the boneless breasts to make a beautiful goat cheese, roasted pepper, and tomato stuffed main dish, which was served with just picked serrano ham wrapped asparagus on a carrot-ginger puree. We made a beautiful paella. We also learned how to filet a whole fish and ensure all the bones are out. During the days, we did amazing hikes, which were equally awe-inspiring vista's and educational . We learned about the geology and history of the region. For me, this was a soul nurturing vacation, which I will remember for a lifetime. I highly recommend this vacation, especially if you are looking for a unique holiday.

Accomodations were both comfortable and inspiring. Wonderfully tasteful updates to a marvelous old stone house and grounds. Cooking experiences were thoughtfully presented. As a kitchen novice, I learned much and ate well. Nature hikes were spectacular. Scenery and expertly guided walks were a highlight which will not be forgotten. Be prepared for some challeging treks (good footwear). Lessons about responsible, sustainable living and resource conservation were gently woven into all of our activities. Lots of food for thought on how we live day-to-day at home. AND our hosts were exceptional.

Our Aragon journey was an experience of a lifetime! We walked amongst the powerful Pyrenees with knowledgeable guides whose enthusiasm was contagious! From the moment that we arrived at Casa Allue we were given a warm welcome from Lucy & Simon, who go out of their way to make sure that everything is perfect for their guests. The two linked houses that form Casa Allue are beautifully restored, traditional buildings that are very much a home not a hotel, in a stunning and tranquil location. Our room was pretty and very comfortable, we had a balcony with beautiful views of the mountains, each morning we woke to the sounds of birdsong and distant cow bells. Our days were action packed and incredibly well organised to make sure that each day held a different activity, our guided walks in the National Parks with knowledgeable guides took us to places that we wouldn’t have found ourselves. And our days out with Lucy and Simon were both educational and great fun, we learnt so much about Aragon history, geology, flora and fauna. The evenings were spent in the kitchen, cooking the evening dinner under Simon & Lucy’s patient and expert guidance. These sessions were so enjoyable, and enabled the whole group to get to know each other over cooking and eating a delicious dinner of good food and fabulous local wine. There were so many highlights to our holiday it’s hard to choose one thing, but ultimately it’s the warm, welcoming atmosphere of Simon & Lucy’s creative vision and their generous hospitality that makes this holiday so special and unique

A really wonderful week with a great combination of history, culture and walking in wonderful scenery. The accommodation is attractive and very comfortable and the food excellent. Simon and Lucy are enthusiastic, knowledgeable hosts making the area far more interesting than I had expected. They are really welcoming and work hard to ensure that everyone has a great time whatever their particular interest.
